NOTE that goat milk does not have the alpha S1 casein protein, the major protein in cow’s milk, and as such, goat milk may be worth a try. Goat casein curd is softer than cow curd, and goat milk fat may be more digestible than that in cow’s milk. Goat milk may also contain higher levels of calcium, B6, vitamin A, potassium, niacin, and minerals chloride, copper, manganese, and selenium (ie. some sources have estimated 13% more calcium, 25% more B6, 47% more vitamin A, 134% more potassium, 350% more niacin, along with 27% more selenium).
