LACTOSE IS the sugar component naturally occuring in milk. Levels of the enzyme lactase (the intestinal enzyme required for digestion of lactose) decrease with age, and/or in the presence of such diseases as celiac disease or Crohn’s(Stanford University Medical Center, Nutrition Services, p.1).
Lactose is in the following ingredients: butter, buttermilk, cheese, processed chocolate, cream, curd, margarine, whey, milk of all mammals, milk solids, yogurt and sherbet Stanford University Medical Center, Nutrition Services, p.1). When introducing processed foods in a few weeks, read labels for any of the above foods.
Lactose is not found in casein, lactalbumin, lactate, lactic acid, although all are made from milk (Stanford University Medical Center, Nutrition Services, p.1).
Although lactose intolerance causes gas, bloating, cramping and/or diarrhea after eating dairy, lactose intolerance is not considered to be an allergy (ie. immune reaction to one of the milk proteins, causing rash, itchiness, difficulty breathing, etc.(Stanford University Medical Center, Nutrition Services, p.1)), and so there is no need to completely avoid dairy. Indeed “tolerance may improve over time as you continue to eat dairy” (Stanford University Medical Center, Nutrition Services, p.1). It is suggested to start with low lactose (hard cheeses) or lactose-free dairy, eating small amounts. And keep it simple by eating only one type of dairy at any meal. Ingesting dairy with other foods may give it the benefit of longer time to digest. And note that yogurt (non-frozen) has live bacterial cultures that help to digest lactose (Stanford University Medical Center, Nutrition Services, p.2).
See the CHART at Stanford University Medical Center, Nutrition Services, p.2 with the lactose content of many dairy foods.
See the LIST of dairy alternatives at Stanford University Medical Center, Nutrition Services, p.3.
